Basil Eggplant was just so-so. But not to take away from the recipe, it is my fault it turned out poorly. It was pure mush and I didn’t have the ever-so delicious thai basil. Thai basil is so fragrant and lovely – it was a real miss. I thought I could get it somewhere while on holiday but couldn’t find it anywhere – had all the other ingredients so thought I would give it a try without. Plus, I cooked the eggplant too long. I was too busy chatting and drinking wine when I should have been watching the stove or I added to much water – it really had to cook down.
And yes, I did serve it with the tofu scramble
Not exactly a great combination but definitely getting all the food groups in! I served the eggplant with brown basmati rice. I love brown basmati rice.
