pg 101, The Vegan Table, Rating 7.5, Made the Cut
If anyone pays any attention to what Day I am on out of the 125 day goal, you will notice that there are no posts on Day 84-91. This was the time period that we decided to extend our trip and there are also a couple of travel days in there too! It was a great break! But it has done nothing in terms of helping me accomplish 250 recipes in 125 days. Folks, it’s just not gonna happen in 125 days! But it will happen, just not as quickly as I hoped.
And to be honest, some of Tal’s recipes scare me! But I will get through them. After this post, the next 4 posts are Tal’s recipes (which I haven’t done in awhile) and they are all good but 1 of them is fantastic, a real delicious meal and got a rating of 9.5. Mmmmm, I only wish I had leftovers of that meal!
But back to the ever-sooooo healthy Penne Pasta with Fresh Veggies. This is a nice, healthy meal. It is not a “OMG! This is amazing or really really good!” It is a “This is a good, healthy meal”. I will make this for my family (or variations of it) from time to time. I used wholewheat pasta. It is chocked full of great veggies, I didn’t bother “julienning” the veggies as Colleen says to do. First, it takes forever and secondly, my girls don’t like stringy veggies, they like to be able to pick up their food with their fork or spoon easily and not have it fall off. The girls ate all of it! Eliot liked it. I liked it. I don’t pile up the pasta either. I try to serve pasta dishes with extra vegetables and just a handful of pasta. I served this with some fresh multigrain bread.
The picture does not do it justice. I forgot to take a picture when it was first cooked, these are the leftovers. I overcooked the broccoli – and the veggies just don’t look that vibrant. But this is how it turned out, so here it is…
