pg 216, The Vegan Table, Rating 8, Made the Cut
Mmmm, mmmm, mmmm. Another great recipe from Colleen. This is super easy to make and great as an appetizer or as a meal served with some bread and soup, but our family was divided. Sage and I couldn’t get enough of this stuff and Jazz and Eliot were so-so on it. Here’s the funny part, when I tasted it for the first time, it reminded me of something I ate as a teenager, something I loved. I went back and tried some more and just let it linger in my mouth as I tried to bring back that food memory. And then it came to me. And I was shocked. I was sure not to mention it to my husband or he would never try it. And then at the dinner table, after his second bite, he said, “Um, Chay, do you know what this tastes like?” His eyebrow slightly raised, and it was this expression and this expression alone that I knew he was thinking the same thing I was thinking, here it comes…….”Schneider’s Liverwurst”. He hated liverwurst and I loved it. But how could this be? How could a savory tofu spread both remind us of Schneider’s liverwurst?? Would someone please chime in? Has anyone made this and thought the same thing? Crazy. I love how food holds so many memories. Sage and I are happy to have found “Savory Tofu Spread”. Great on bread, crackers and even as a sandwich spread with some tomatoes and cucumbers and romaine lettuce!
It is packed full of onions, garlic, thyme, sage, rosemary, basil, oregano, pepper, nutmeg and white miso paste. Very good. Try it.

I made this last week for a party and not having a photo to go with it, I wasn’t sure what results to expect. Yours looks much better than mine! I made mine at my mom’s house so I had grabbed the brown miso instead of the white… and her food processor didn’t incorporate everything as well, but my guests still said it was good! I will give it a try again now that I know I should expect a texture more like humus, at least, that’s what it looks like anyway.

The texture I like is a thick spread, so that if you were to turn your cracker or bread upside down, it would not drip off the bread. I loved this appetizer!

I LOVE this recipe. My husband is not as crazy about it as I am, but I think it is delicious and totally satisfying.

As a kid I remember eating braunschweiger, which is similiar to liverwurst, and liking it. So I tried it for lunch today and it is good. My hubby said he didn’t like liverwurst but he did like this. Glad to have this recipe! Bryanna Clark Grogan has a similar recipe on her website.

I’m drinking a glass of white wine right now and would really like to be eating this spread on some bread – it would go great with my drink!
