A very good salad. And even better the next day. Another bonus – you can make it advance of serving it! Of all the lentils – the French lentil is by far my favorite. I love the way it holds its shape and oh so tasty. Yum. It’s quite ‘vinagery’, but I like that – if you don’t, maybe hold off on some of the red wine vinegar or dijon mustard. The girls did NOT like this salad but Eliot and his Mom both liked it and so did I! Once again, I prefer it cold versus warm. 12 grams of protein per serving, 2 grams of fat, 32 grams carbs – pretty darn good if you ask me!

This is definitely one of the recipes I want to try from The Vegan Table! I’ve never cooked lentils before, but I’m definitely using the French/puy ones. Thanks for the review!
